The Hicks Brothers, established their bacon curing industry in 1878 on their property between Mary and Sophia Streets, south of Addison Street in Shellharbour. There they excavated and built a cement reservoir for a water supply for their increasing trade, determined not to be short of water during future droughts. At this time there was no permanent water supply in the Village.
The first cold air plant refrigerator used in the colony for the bacon curing industry was built with the Hicks Brothers. Their ‘H’ brand of bacon became famous and their business grew to large proportions at Shellharbour in the late 1800s.
Hicks Bros later sold their interests in the Shellharbour area and moved to Lismore. They had started interests in the Lismore area when the supply of pigs decreased from the Shellharbour dairies, and by the early 1900s had set up the first bacon factory at South Lismore as Hick’s ‘OK’ bacon.External LinkA Sacrifice to Maternal Duty - Mrs Hicks 1873Obituary Mrs Henry Hicks Snr 1893Deaths Lucinda Hicks 1893Obituary Mrs Henry Hicks Jnr - Sarah Hicks 1900Perpetuating His Memory 1900Wedding Bells Hicks - James 1901Death Henry Hicks Snr 1902The Pig Market 1903Hicks Ltd 1908Messrs Hicks & Co 1908Death Arthur Gordon Hicks 1909Funeral of Veteran Rifleman 1929Obituary John Gordon Hicks 1939Mr Hicks Dead Veteran Rifle Shoit 1929Death of Mr H Hicks 1929
